抹茶 is read "matcha" (mat-cha).
In English, too, it is simply called "matcha."

The tea that matcha is made from is written 碾茶 and read "tencha."
Japan's Ministry of Agriculture writes it partly in kana, as てん茶.

According to the Ministry of Agriculture, tencha is made from leaves grown in shaded tea gardens, covered for about two to three weeks before harvest to block sunlight.
After picking, the leaves are steamed and then dried without rolling.

Matcha is this tencha ground into a fine powder in a tea mill or similar.
In other words, tencha is the leaf before grinding, and matcha is the powder after grinding.

Sencha leaves are rolled after steaming and then dried.
So tencha, which is dried without rolling, differs from sencha from the processing stage onward.

As for grinding, matcha is defined to include not only tea ground in a traditional stone mill but also tea ground in machines that work in a similar way.
What matters is that the raw material is tencha.

According to NARO, Japan's national agricultural research organisation, a technical report covering the history of matcha and how tencha is grown and processed has been published by the International Organization for Standardization (ISO).
Matcha is a Japanese tea whose definition is now being organised internationally.

Incidentally, under the Japan Tea Central Association's labelling standards, tea ground into powder with a grinder Incidentally, under the Japan Tea Central Association's labelling standards, tea ground into powder with a grinder or similar is called "powdered tea" (funmatsucha).
Not every powdered tea is matcha.

The place name 八女 in Fukuoka is read "Yame" (yah-meh).
八女抹茶 is read "Yame matcha," and 八女茶 is "Yame-cha."

"Yame matcha" is also registered as a regional collective trademark with the Japan Patent Office.
Under this trademark, Yame matcha means matcha finished in Fukuoka Prefecture from aracha produced in Yame City and the surrounding area.

According to Yame City, Yame is in the southern part of Fukuoka Prefecture, about 50 km south of Fukuoka City.
It borders Kumamoto Prefecture to the south and Oita Prefecture to the east, close to the centre of Kyushu.

According to the Fukuoka Tea Promotion Council, about 90% of the prefecture's tea-growing area is in the Yame region.
Gyokuro and tencha in the prefecture are produced mainly in the mountainous areas of Yame.

JA Zen-Noh Fukuren describes Yame's climate as inland, with warm days and cool nights.
It also notes that the area has plenty of rain and is prone to morning and river mists.

The Japan Patent Office's trademark page explains that Yame is known for gyokuro, and that matcha is also made there using those gyokuro-growing skills.
Gyokuro and tencha are both grown under shade.

Kyushu is also home to large tea-producing prefectures such as Kagoshima and Miyazaki.
Among them, Yame, a hillside region that grows gyokuro and tencha, is the source of matcha from Fukuoka in Kyushu.

Morioen's Reigan no Hana is Yame matcha made from Yame tencha, carefully ground in a stone mill.
Its name comes from Reiganji, the temple said to be the birthplace of Yame tea.

For the beginnings of Yame tea, the story of Reiganji, and how to whisk matcha at home, please see this article.

Morioen also makes a powdered tea by grinding Yame Gyokuro Shiraore in our own electric stone mill.
Because it is not made from tencha, it is a powdered tea rather than matcha.

Even among powdered teas, a different raw material means a different taste.
Try comparing matcha and powdered tea side by side.
