Hello from Meicha no Sato Morioen, a Japanese tea shop in Shingu, Fukuoka.
This time we explain how to brew shiraore tea.

Shiraore is a type of kukicha, or stem tea, made mainly from tea stems.
We answer common questions such as "How hot should the water be?" and "How long should I wait?"

For more about shiraore itself and how it comes from aracha, please see this article.

First, here is a quick summary.
We explain the reasons step by step below.

- Water temperature: 85–90°C (about the temperature of water from a hot-water pot; what Morioen recommends for Gyokuro Shiraore)
- Leaves: about 3 g per person (roughly one teaspoon)
- Water: about 100–130 ml per person
- Steeping time: taste after about 1 minute, then extend up to 2–3 minutes to your liking

The leaf amount, water amount and time are based on general guidelines.
The National Federation of Tea Producers' Associations suggests 3 g of leaves, 130 ml of water and 2–3 minutes per person for stem tea.

However, brewing guides vary from source to source and shop to shop.
Taste is personal, so start on the short side and find what suits you.

Gyokuro is usually brewed slowly with cooler water.
The National Federation's guide suggests about 50°C for 2 minutes 30 seconds for high-grade gyokuro.

Morioen's Gyokuro Shiraore is a little different.
On the product page, we explain that it tastes best brewed at about 85–90°C, straight from a hot-water pot.

You don't need to spend time cooling the water, so it is easy to brew every day.
Enjoy it casually in the morning or after a meal.

1. Put the leaves in the teapot, about 3 g per person.
2. Pour in water at about 85–90°C, put the lid on and wait.
3. Taste after about one minute.
4. Pour a little at a time into each cup in turn, down to the last drop.

Pouring in turn evens out the strength between cups.
Leaving no water in the teapot helps the second infusion taste good too.

For the second infusion, about 30 seconds after adding hot water is a common guide.
Enjoy how its taste differs from the first.

We also recommend Morioen's Gyokuro Shiraore for cold brewing.
Try it on hot days or when you want something refreshing.

A Japanese tea promotion leaflet, supported by the Japan Tea Central Association and others, suggests about 10 g of leaves per 1,000 ml of water.
Put them in a bottle with a filter or strainer and let it steep slowly in the refrigerator for about 2–3 hours.

The same leaflet explains that because cold brewing extracts at a low temperature, the tea is less astringent and bitter, with a sweet, mellow taste.
Compare it with the hot-brewed cup.

Putting the leaves in a tea bag makes them easier to take out later.
Keep the brewed tea in the refrigerator and drink it within a day.

If you want cold tea right away, brew it a little stronger with more leaves and pour it over a glass of ice.
As the ice melts, the tea settles to a good strength.

On days without a teapot, or when you want something even easier, powdered tea is an option.
At Morioen, we make a powdered tea by grinding Yame Gyokuro Shiraore in our own stone mill.

Just mix it into hot or cold water to enjoy the taste of shiraore.
The 30 g bag is resealable to keep out moisture and odours.

Brew it from the leaves, cold-brew it, or enjoy it easily as powder.
Choose how to make your shiraore to suit your mood that day.
